El Jolgorio Barril is crafted from the Barril agave, a rare subspecies of the Karwinskii family that grows at high altitudes in Oaxaca. The Barril piña is known for its dense sugars and low water content, which results in a mezcal of great complexity.
This mezcal offers a unique combination of delicate sweetness, citrus notes, and a distinct mineral character. Its earthy profile is rounded out by subtle hints of light smoke, providing a layered and balanced tasting experience.
The agave is harvested after 12 years of growth in Santa Maria Zoquitlán, Oaxaca. It is roasted in a conical underground oven, ground by a horse-drawn tahona, and fermented in wooden vats made of sabin and pine using water from a nearby river. The mezcal undergoes double distillation in copper alembic stills, a process overseen by master mezcaleros Gregorio Hernandez, Ignacio Parada, and Valentin Cortes.
