This mezcal is made from the rare Karwinskii agave (formerly called Cenizo locally), which takes up to 14 years to mature. This agave produces a mezcal with a distinct profile, combining sweet nectar, chalky minerals, and sea salt for a nuanced flavour experience. Though once labelled "Cenizo," changes in certification rules mean it’s now simply referred to by its scientific name, A. Karwinskii.
On the nose, you get the rich scent of cooked agave. The palate delivers sweet and mineral-rich flavours, balanced by a hint of sea salt, making it both refreshing and complex. The mezcal finishes with a long-lasting, smooth finish, perfect for sipping.
Produced by the renowned Master Mezcalero Ignacio Parada, this mezcal upholds the legacy of great mezcal craftsmanship. Known for his expertise with wild agave, Parada's work with Karwinskii is a testament to his skill and deep connection to Oaxacan mezcal traditions.
As part of El Jolgorio’s effort to preserve rare agave species, limited releases of this mezcal are packaged in black bottles, distinguishing them from the brand’s more commonly available offerings.
