El Jolgorio Cuixe is made from the Cuishe agave, a rare, wild subspecies of the Karwinskii family. Unlike other agave varieties, Cuishe grows in a tall, cylindrical shape with its leaves spread at the top. This mezcal offers a complex and earthy profile, with a distinct aroma reminiscent of wet clay.
On the palate, El Jolgorio Cuixe is spicy, with subtle layers of soft smoke that add depth without overpowering the natural flavours of the agave. Its complexity and character are ideal for those looking for a nuanced mezcal.
Produced in Santa Maria Zoquitlán, Oaxaca, this mezcal follows traditional artisanal methods. After 13 years of growth, the agave is roasted in a conical underground oven, ground by a horse-drawn tahona, and fermented in wooden vats made from sabin and pine using river water. It is distilled twice in copper alembic stills by Maestro Mezcalero Ignacio Parada.
