El Jolgorio Pechuga is a mezcal joven made from the Pechuga maguey (A. Angustifolia), known for producing a distinct and celebratory mezcal. Pechuga mezcals are often created for special occasions, and this particular bottle embodies that tradition.
With an ABV of 48%, this mezcal is bold and powerful, yet well-balanced thanks to its double distillation in copper stills. The mezcal's robust character is complemented by its fruity and savoury layers, traditionally achieved through the addition of fruits, nuts, and a chicken or turkey breast (pechuga) during distillation.
Crafted by master distiller Gregorio Martínez Jarquín, this mezcal is produced in Santiago Matatlán, Oaxaca, using underground volcanic stone ovens for roasting the agave and a tahona for grinding. This adherence to artisanal methods ensures a high-quality spirit that stays true to Oaxacan mezcal traditions.
El Jolgorio Pechuga holds CRM and Kosher certifications, reflecting its quality and sustainable production practices. The mezcal is fermented with mountain water in wooden fermentation tanks, which adds an extra layer of depth to its flavour profile.
