Paranubes Caña Criolla is a limited seasonal release from the Sierra Mazateca, produced using only Caña Criolla – the most widely planted and sugar-rich cane variety in the region. Usually making up around 85% of the Paranubes Blanco blend, this single varietal version is only produced when a fermentation tank is available between regular batches, making it rare by nature and timing.
Organically grown at high elevation and pressed within 24 hours of harvest, the juice is wild fermented in pinewood vats and distilled in a single run on a six-plate copper column still – with no water added.
Crafted by Jose Luis Carrera, a third-generation distiller, this expression showcases Caña Criolla’s rich, savoury depth, alongside overripe tropical fruit, a peppery, grassy nose, and notes reminiscent of popcorn and cooked wheat. A strong yeast character adds further dimension, leading to a long, uniquely savoury finish.
Bottled at 54.4% ABV, this is an agricole-style rum shaped by variety, altitude, and craftsmanship.
