Sotoleros Bienvenido Sotol is a traditional Mexican spirit crafted from wild Dasylirion Wheeleri, a plant native to the Chihuahuan desert. Distilled by Maestro Vinatero Bienvenido Fernández, a fourth-generation sotol producer, this sotol embodies the rugged landscapes of Madera, Chihuahua, with its high-altitude forests and arid terrain.
Using traditional methods, the sotol piñas are roasted for three days in an underground horno, then mechanically crushed and wild-fermented for seven days. This artisanal process produces a robust and complex spirit, distilled to a bold 49.4% ABV and rested in glass for months to enhance its character.
Aromas of orange zest, rosemary, and juniper, while the palate delivers flavours of pine sap, maple syrup, and lime pith, with a rich, satisfying texture.
