From the same starting point as our American Oak Rye, but with an extended flavour profile bringing the rye distillate into a new profile that makes soothing and fruity rye compared to more traditional rye. To accomplish this, Widow Jane added fresh-cut Applewood Staves alongside the oak.

Aged in first fill Bourbon Casks and finished with specially toasted and cut Applewood segments, allows Widow Jane to capture the round flavour left in the bourbon barrel, and balance it with genuine, bright apple notes and subtle sweetness.

For any whiskey, water makes a majority of the final spirit. Widow Jane is the only spirit that uses water from the legendary Mines of Rosendale, NY. Filtering it naturally through "hard-yet-sweet" limestone water, the high mineral content bonds to the compounds in the barrel and coats the palate for a long, rich finish.

It has a unique and unexpected flavour for a Rye whiskey. The expression focuses on slightly sweeter, softer notes. "Non-Chill" filtered for the deepest flavour. While most Ryes are very peppery, brash or slightly abrasive, this Rye is more subtle and allows for a more elegant profile when used in a cocktail.
