This integration of diverse flora contributes to the unique profile of the rum. The cane is carefully harvested, pressed, and the juice is then slowly reduced to syrup. This meticulous process ensures every drop retains the pure essence of the cane.

Natural and sustainable production

The fermentation process of Clairin Sonson is entirely natural, relying on local yeasts for a spontaneous fermentation that highlights the distinctive qualities of the region. Stephan Kalil Saoud oversees the distillation using a traditional pot still heated over an open fire, a method that infuses the spirit with its robust and charismatic flavour.
